Actually found it!  Under the devices and printers,  Print Properties.  Print Test Page.

It will pop up the menus when printing, im sure this can be set in any application when trying to print as well,  but when you set your predetermined settings the Advanced tab will allow you to save the profile you just created.  That when when you go to print from any other applications or the same one the default or your set one will be automatically filled out as you wanted.
