This was a known issue that was resolved in Laserfiche Snapshot 9.1. This KB article talks about it in more detail. Unfortunately, imported content with corrupted text cannot be fixed; it'll need to be reimported with the new version of Snapshot to get a proper version of the document.
I had a similar issue, I do not know of a solution, but I have heard that you should make sure the current version of snapshot is installed to ensure best accuracy (i think). Maybe a presales engineer will have more information for you about what version to ensure they are using
