I am looking at the Email workflow task and see this (screenshot). This gives me the impression that I can change the SMTP default to something else. If this is the case where can I change the SMTP server and if not why is it there?

We often build features to be flexible to accommodate additional options in the future, even if there's only one option initially. I agree it can be a bit confusing if that's shown in the UI when you can't currently select anything else, but sometimes that's why it's there.
Note that the above is a general observation about feature UIs and should not be taken as implying any upcoming changes to the Laserfiche Cloud Workflow Email activity.

According to this post, you cannot change the default SMTP server in Cloud. Maybe Email Display Names settings would be useful instead.
I saw that as well but it was from 2020, and I figured there were some changes since then. I guess the better question is why its is listed as default if you cannot change it. If there is only the one option why say that at all?
