The use case being that an employee may be out on vacation or extended leave. I see similar use cases/feature requests but I haven't been able to find a solution to this without having to find every single task and re-assigning it to an alternative user.

If you know that your task is assigned to a specific person, you can go to Monitor, select Tasks and then enter that users name in the Assigned to. Highlight all the tasks click the re-assign button on the top left and select the user you want to reassign to. It only works if it is a perfect one-to-one, however.
This is a use case we are actively looking at making easier. In the meantime definitely check the answers here.
