Universal Capture is a "Scan Source" in the Scanning applications (Scanning and Quick Fields) that processes images only.  Snapshot is a "Printer", so anything that you can print can be converted to an image.

You would use Snapshot to convert Word, Excel, or any other non-image documents into images in the repository.

You would use Scanning with Universal Capture to process image files into the repository.
