We are wanting for Quickfields to retrieve data from multiple pages and add them to a particular field on the same template. Example, the document with template "A" has 5 pages, and we need to populate field " Number" with data from all 5 pages making that field a multi-value field. Can Quickfields capture this data from multiple pages of the document?

Yes Quickfields can do this. You can create document classes to classify the type of document and use 'page processing' to designate the desired data you wish to extract from each page.

Thank you Xavier, however my issue now is that the data that is captured in the last page is over writing the data captured in the previous pages and all I see in the template field, is the data from the last page. How can I get it to capture all the data and not just that of the last page?

If you're looking to combine data from multiple pages into a single token, you'll want to use Token Accumulator.
