Is there a way to record Outlook sent and received data into fields that can be put into columns much like date created/edited/template information?

Yes, you can configure templates to auto populate email properties on import. You can configure it globally in the admin console, or for your specific user in the Client/Web Access.. The help page for this can be found here.
