Is there a way to restrict access to documents in a folder so that users would only see documents that they own?

If you mean ownership, as in the documents they created and are the "owner" of as seen in the document properties, then yes.

In the admin console > Repository Options > Settings > Documents tab, you'll see where you can set the default owner. If it is set to "Creator", then each person that creates an entry will become the owner by default.

According to the help documentation, an owner has access to their own documents.

So, if you restrict a users access to folder, they should still be able to see/edit the entries they "own". I haven't tried this, but if you have issues, you may have to give them "browse" access and restrict the scope to something like "this entry only" for the folder in question.
