I have a client that's looking to assign a cert for the whole organization instead of specific individual to use with Laserfiche Digital Signature. Is this something that is possible to do or do we need to assign a cert of each individual user?

What's the intent of doing this? With a global cert, you'd basically lose all the gain of digital signatures.

By using the global cert I assume when a user sign, it will log their info to the signature? Or am I misunderstanding this that each user should have their own certificate?
and also the reason behind this is to verify that user have seen the document to check off the approval process.
Each user should have their own certificate - it's the certificate itself that has the users name, for example. Otherwise any user could pretend they were someone else.
Note that you don't need to buy an individual certificate from a certification authority for each user, you can simply buy one for the organization and generate individual user certificates from that. Or if you just want internal-only certificates, you don't even need to bother with that.
