You should be able to do this in Workflow 9.2 or higher.  You'll need to add the "Page Count" token to your Search Repository activity (see Screenshot1).  That will make "ForEachEntry_CurrentEntry_PageCount" available as a token in your For Each Entry activity.

From there, you can use the Assign Token Values and Token Calculator activities to create and update a Page Count token (see Screenshot2).
