When submitting a form, the last field that a user enters before submitting is a text field...what I am seeing is that if the submitter types in the text value in the field and presses enter, the form will submit but it will not recognize the field value. He/she must type in the field value and tab out of that field before submitting.

Seems like a defect. You could try writing some javascript to do a "change()' on that field when the Submit button is clicked. Maybe that will capture the change whether the user tabs out of the field or not. I haven't tried this, but it's a thought for a workaround.
