There isn’t a way to change field security through workflow. However, you can assign field security rights to a user or group in the Administration Console. If you have a select group of users who will always be updating this status field, then you could create a group that would be able to edit this status field. As a note, field security applies to all documents across the repository to ensure that the data is consistent and accurate.
