Can Quick Fields place "N/A" text in a metadata field if no text is captured?

you can use a conditional to change the token to N/A if its empty. That's what I would do if it came down to it.

 

Or you can set a token to N/A and use a conditional on each page to check a token. If its found something, it puts that value into the new token you made so it has that value for your metadata
