Convert a Forms Date field into a Workflow String Token

How would I get this accomplished?  Ultimately, I need to fill out a PDF and when trying to map out the fields, the PDF fields names show 'Format'.

I'm hoping for a Token dialogue Formatting or RegEx configuration.  Otherwise, I suspect this will need to be scripted.

Please point me in the right direction.

Is it just a matter of the PDF field expecting the date in a different format than the default date format on the WF Server? If that's the case, you could just use date formatting on the token to convert it to whatever the PDF field wants.
