A client of ours is looking to move their VMware environment to VBlock. Client wants to make sure that they will be supported with Laserfiche moving forward on this VBlock with any release.

Hi Emad,
Laserfiche as an application is totally unaware that it's even on a VM rather than a physical machine. Basically in a nut shell, if the VM system supports LF supported windows OS's then it will work.

This seems like kind of a moot discussion, since, according to the link you provided, VBlock runs VMware as their virtualization platform. Unless they are doing something strange, VMware is VMware is VMware. VBlock just appears to sell appliances, so the software shouldn't be relevant.
There is an older white paper on virtualization that still applies.
