Have a client that has their C: getting full and one of the folders that is taking up a lot of space is the ServerData folder under C:\ProgramData\Laserfiche\WF. My question is can this folder be moved...if so, what's the impact?

Run the Workflow Server Configuration and change the path used for the Workflow Server File System. Make sure the path is accessible by the account used to run the Workflow Server service. Upon completion of the configuration, the files should be copied to the new directory automatically. There won't be any impact.
So after the copy is complete and it says the configuration update was successful, can we delete the original files from the C: drive to free up that space?

Putting aside any recommendations to keep or archive log files, when there are GBs worth of cache files, once all running workflows have been completed or terminated, can the ServerData folder contents be deleted?

The Server Data folder contains the WF volume (with master documents for PDF and Word file used in Read PDF Form Content and Update Word Document activities). It also contains the cache files for running workflows, which are cleared when an instance completes. The Subscriber log files are also in this folder.
So don't wipe out the contents of the folder. Run an inventory tool like SpaceMonger or WinDirStat to see where most of the data is. I expect it will be in the SubscriberLogs folder if the server has been around for a few years and fairly busy. You can delete the contents of that folder or at least prune them back to the last few months.
