Remove original form and leave only values behind

I am pretty sure I saw a really neat feature at the user conference a couple years ago but did not have a need for it until now.  

 

From what I saw, you could scan a blank form into Quick Fields and it would "memorize" what the blank form looks like.  You could then scan in that same form completely filled out and Quick Fields would remove everything it "memorized" and leave only the answers to the form questions behind. This made it super easy to use Zone OCR to capture the left over results without having to worry about form lines, boxes or form field descriptions mixing in with the fields you are trying to capture.

 

Does anybody know how to do this?

I have one more question regarding form extraction, is there an additional cost for this feature like bar code reader or is it bundled with the rest of the Quick Fields processes?
