Is there anyway to obtain the Empower 2014 VM with the appropriate Windows and Laserfiche demo licenses for the next 60 or 30 days?
The conference VM is no longer available for download from Laserfiche. The licenses on the copy that was destributed would expire at the end of this month.
If you have the VM, then you simply need a Genuine Windows Server 2008 license (I believe that's the OS from the VM) to activate and use it indefinitely (as far as I know)

We might have a couple options for you in Presales. First to follow Kenneth's suggestion. Do you have the ability to activate the Windows Server? If so, we can get you the expired copy, which you can activate. You would also need to change out the Laserfiche licenses to instead use your VAR Kit, as those have expired, too.
The other option is to get in touch with your sales manager (Maria, I believe) about using one of our hosted VMs. It's not something that could just be readily available for the next month or two, but you could schedule time on it as you need it.
