Are there any resources available for building a customized demo? ( anything similar to things taught in VAR105 at Empower?)

That's a pretty broad question! Are there specific aspects of demo-building that you're looking for help with? We offer in-person options at VAR training, and at Empower, but I don't know that we have much in the way of formalized written resources.
If you keep your eyes on the VAR Weekly, the Presales team has a recurring column called Presales Place. The topics covered can vary pretty significantly, but we do try to offer some some cool tips and tricks when. This week's article, about International Advanced VAR Training is probably not going to be a great help. But past articles, such as Building a Demo Repository with Laserfiche Forms and Workflow, Last Page Identification in Quick Fields 9, and Dynamic Fields in Laserfiche Forms might help to get you started.
We've got some cool new resources planned for 2014, but I can't say anything about that yet :) In the meantime, we're happy to provide advice about creating demos if you can narrow down your question a bit.
In VAR 105 Joe King spoke about "smoke and mirros" approaches. For example; I was looking for some resources on what he called "hacking their webpage" (not actually hacking). In this example he takes the customers webpage and adds a link into LF. Also, he spoke about customizing weblink. Are their any resources on how to customize weblink and the desktop?
