Legacy Forms migrated to 9.1

We have a number of forms that were configured in 9.0 where we updated the SavetoLFConfiguration.xml file to accomdate storing the image in Laserfiche and then using Workflow to route the document (per the Help File instructions).  Since Forms 9.1 makes that work around not necessary, is it possible to have both the legacy process in place and create new forms that use the new storage mechanism or will modifying the SaveToLFConfiguration.xml cause forms created in 9.1 to not store correctly?

You can use both. The two methods of creating form submissions in the repository are independent of each other. The Save to Laserfiche feature will be removed in the future so we recommend using Save to Repository service tasks instead.
