You can setup a workflow starting rule such that the event type is "Entry Changed", then use the entry changes option to select which change you want to initiate the workflow. The metadata related options are "Template Assigned", "Template Field Deleted", or "Template Field Set".

You can also use the %(rulename) token to test for various different starting rules and route based on that in a routing decision.

I was under the impression it was a feature of 9.1 that you could monitor specific fields, not just any "template field set". Since I cannot find it, I'll assume I was wrong.
Even without this type of event support in "Entry Changed", Is there a way to monitor a specific field changed?
