I believe that this should be possible provided that you used "file separately' or 'leave in and file a copy" for Attachment behavior, correct?
If attachment is a pdf ( contains text), we should be able to ocr that text, correct?
Is there a way to differentiate which emails has MS Office attachments versus pdf attachments?

You’re mostly correct! It’s not actually possible to OCR a PDF, but we can extract the text from it. The end result is the same as an OCR.
I’m not entirely sure what you mean by your question about differentiating which emails have office attachments vs PDF attachments. Once a document hits the repository, Workflow can examine its extension and take appropriate action, but there’s no way to make the Office integration behave differently depending on the file type.
