When will on-premises clients have access to the API version 2.0?

It is scheduled for Fall 2025.

Josh,

We had some related work that needed to be performed before we could start on this, so it delayed the project a bit.  But the main project is underway and are expecting a release early 2026 Q1 (but we are trying to release sooner).

Scheduled for Spring 2026.

Blake is correct and we are on track for that release timeframe.  As we get closer to completion I will update with a more specific release date.
