If you're referring Laserfiche Group Watermarks, Tag Watermarks / Snapshot Watermarks, etc., they are just image modifications that change some of the pixels. I'm not aware of them being secured against additional manipulations in any special way. There are certain visual patterns that can mark watermarks harder remove, but none that make it impossible.
There have always been image manipulation tools that can remove watermarks. Long before "AI" existed, people could remove watermarks in Photoshop and similar applications. "AI" image manipulation tools have just made the removal process easier.
If you need to verify the authenticity of a file and confirm it has not been altered, use digital (cryptographic) signatures and/or file hash/checksum comparisons.
There's an interesting discussion of physical and electronic document watermarking from a 3rd party software vendor here: Best Watermarks for Documents - Locklizard. Even their "most secure method" states that those watermarks can't be "easily" removed, not that they can't be removed. Removal-resistant, not removal-proof.
