Is there a way to set up a reminder for a User Task in forms to send the reminder on a specific day of the week. For example sent every Wednesday at 9:00 am
Are you wanting to send out email reminders for specific tasks, or for open tasks in general?
For specific tasks, you run the risk of flooding someone's inbox if you send an email for each open task.
You could look into aggregated notifications at the admin level:
If you wanted to send a generic email reminder to check all open tasks every Wednesday at 9:00am, you could also set up a new business process like so, obviously changing the date and time frame:
On the task you want to send the reminder for can click the reminders tab and set it to the first Wednesday at 9 am you want the reminder to go out and then have it repeat every 7 days.

Task reminder does not support send on specific day of week for now. It only supports repeat on an internal like 1 day/hour/min.
