How can I delete pages from documents and convert the document to a PDF using Workflow

Yes we do, there's a convert to PDF activity that takes the Laserfiche Entry's pages and converts it into a PDF entry. There's also a Merge PDF activity and a Generate Pages activity amongst many others.

To delete the pages you just have to create a new document, move the pages to delete to that document and then delete that document.
