Can the Laserfiche web client be configured to not have to have /Laserfiche on the end of the URL? So just a root site of documents.domain.com will take you to the LF web client?

Chris, unless something has been hardcoded in the Laserfiche Web Client files, that is really all controlled by IIS. You would need to create a new web site in IIS and configure it to use the root site you want. The tricky part would be to get all the security, files, and other settings for the site configured since I don't believe any of that is documented.
I would try using IIS Web Deploy. You will need to install it since it doesn't come default with IIS. It should allow you to export an Application within an IIS Site and then Import it into a new site.
