Is there a way for someone to change/alter a session after it has been already created in Quick Fields?

Yes, you can modify document classes and update the template and any other properties.

I assume that you mean you've used the session creation wizard, but now do not know where to change the settings you provided to the wizard?
They are different places, depending on what you want to change, but most of them are in the Document Class Options dialog
Some are also in the "Task Pane" (on the right, by default) when the document class is selected
And some are in the Options dialog:

Thanks a lot.
I found it under your first screen shot. By right-clicking on the name of the "Document Class" and selecting Configure fields, then selecting the correct template.
