How flexible can date variables be within a started forms process?

I have a customer that sets up events. This customer uses laserfiche forms for the submitted event. So this question is in the context of forms and its accompanying BPL. This customer needs flexibility with event date after the initial form has been submitted.  So, basically they need a checkpoint, approval point, where they can change the event start date.  I planned on giving this customer access to the event date variable at this checkpoint.  Essentially they would be able to change the event variable date.  With that said,  I dont exactly want them to go beyond that approval point, but if I have to to get the date variable updated, so be it.  

Ok, with that said here is my specific question.  I have timers setup off this checkpoint.  A 30 day timer and a 14 day timer and a 3 day timer.  This checkpoint could be a year away from the event or 2 months.  These are all reminders for folks involved in the event.  So the reminders kick of emails.  Now, if I give the customer the ability to change the start date at the checkpoint, approval, will the updated date, the updated variable, be usable by the 3 reminders or will they fire off using the originally submitted event date.

So this is a question about how flexible a date variable can be within the process.  I am going to run some test and will update this when I'm finished, but would love some feedback if this is possible.

You can configure timer catch event to wait based on date variable, so when run to the timer event, it will be started and wait until reach the date variable value to complete. But once it is started, if you change the date variable value from other steps, it will still wait based on previous value.
