I can't get Workflows in LF Cloud to remove fields from unassigned templates, even if I blank out the field beforehand.  I know for on-prem there's some setting you have to check for the assign fields activity to override default values or something like that but there's no extra options for this activity in Cloud.

Has anyone found a way to remove non-template fields using workflow in Cloud?
