QF would not be able to change if the scanner scans in B&W or color within a batch.

However, if you scan in color, you can remove the color and switch it to black and white using the color removal process. I am fairly sure this is an addon. This does require that it is specifically page x of the scan. If it is a specific document type, you will also need the classification addon and specify the document classes that need to be in B&W.

It is possible, but unlikely, that the scanner comes with something that could do that. Generally if that is the case you would have to go through their scanning software.
