After I get that set up, what needs to happen in the Import Agent application so that emails that come into our mailboxes can be saved to the repository?

The field you highlighted would be the email account that you are going to be monitoring with the email archive tool.
Email Archive works as a standalone application and will save documents directly the repository. There is no requirement for configuration in the Import Agent (Folder Monitoring tool) for Email archive to work.
As and FYI, It appears you have an older version of the Email Archive tool as in the 10.4x release it supports IMAP as well as SMTP protocols. I would recommend using the newer tool and IMAP if your mail server supports it.

I'm not sure what the relevance on the "monitored email" is then, I suppose, as I really only care about the email inbox that will be receiving the emails, which goes on the Import Rules tab:
Yes, this is just a way to set rules to capture specific emails from the inside the email account you are monitoring
Ah, so in order for emails to import, they have to be sent to the monitored email account?
Yes, as emails are being sent to the Monitored email account, if they meet the rules you set out, they will automatically be pushed to the folder in Laserfiche that you have defined in your profile.
