Is there a way to blind copy someone when sending a task out? Am I just missing it?

There is not. Currently there is only 1 email that gets sent out and that email includes the task link. If you want to BCC someone as a notification that task has been assigned to someone else, then you can use an email activity before the user task.

Got it. I wish this was an option.

Depending on the purpose of your BCC, you could do it with rules on your mail server. That way you don't have to rely on process designers to remember to also add an email task.
