I use an iPad Pro because it's easier for traveling than a laptop. Will I be able to use it for Empower labs? Unfortunately, there are no more Laserfiche computers available for the labs I need.

There are a couple labs that you could partially follow along for--the labs I'm about to mention both make use of a file stored within the virtual machine, which as Brian mentioned cannot be run on an iPad. For Process Designer 204: Building Business Processes in Laserfiche Cloud and Power User 205: Streamlining Processes and Business Decisions in Laserfiche Cloud, you might be able to carry out most of the lab actions in a web browser with the exception of using Word documents that live within the VM.
However, you may want to choose to "audit" lab classes instead--for classes where Laserfiche laptops are already fully reserved, you can still come to learn. You won't be able to follow along on the laptop itself, but you can still get a lot by watching the presentation.
The purpose of the laptop in a lab is to run Laserfiche software, which by and large only runs on Windows machines. Even for applications that support iPads, such as web applications, the laptop is running the server that you would need to connect to. I'm not aware of any labs where you would be able to participate with an iPad.
