Is it possible to customize how a date field displays the date? I'd like the date to read out as, something like this; Thursday, November 21, 2019. Seems like it would be possible but as a newbie I cannot seem to find the answer. Thanks for any help.

You can add display formatting in the field definition itself. Here's the dialog in the web client management page:

The formatting you want looks like it's covered by default by the "Long Date" radio button. If that isn't exactly what you want, you can always add custom formatting. Here's the documentation on custom formatting:
