I am creating a workflow in the Laserfiche Cloud and would like to have an "Update Word Doc" activity. However, I'm not sure how to upload the Word doc to the server for the activity to find.

You should be able to upload a word document under Process Automation > Files > New > Choose File

For the current (July/2024) version of Cloud the Files option has moved to Process Automation > Data Management > Files
