If you are trying to access the logged in user, you can access this by selected the variable while editing a field in the layout portion of the form. 

 

For example, create a single line field on a form, under the edit features for the field, there is a default value box. Click the > chevron and under the dropdown, there are variables for Process Variables. The first one should be "current user", this opens up and you can select either the current user's "email", "name", and "username". 

NOTE: "name" = the user's full name.

 

When you load the form, the single line field should now be auto-populated with the current logged in user's info that you selected.

You can also set any variable to a username and use that variable when emailing or assigning user tasks. Forms doesn't have the specific concept of a user variable, you set a regular variable to a username, and other places will recognize that username.

Yeah but it comes as the submitter and previous submitter I don't have access to change these user variables they don't even show up but I am able to select them when creating a form. Do they automatically create themselves?

Yes, these variables update based on the last submitter in the process. You cannot set them yourself.
