Is there a way just to export the OCR'd text of documents and then import it into excel?

You can extract the OCR'd Text in Workflow using "Retrieve Document Text" but you would find the text is very unstructured (it's basically what you see in the text pane)
You can also get the Text files using Download Report, but this will give you the Image File and a Text Document associated with each file
What is the use case?
In the Document Viewer, turn on the Text pane, select the desired text, copy it, and paste it into whatever you want.
I am guessing that you would need to use a delimited text file instead of Excel to save it into originally since it is just unformatted text coming from the OCR.
If you can get what you want manually, then you can try to replicate the process using workflow as Steve described above.
