Change default Subject to include variable

When a form is submitted, users have the ability to Download and/or Email the form by entering an email address.

The email that is generated displays what is shown in the 'Thank you Message' section, but the subject line is NOT editable.

It sends with subject of 'Copy of Form %(Form Name)' -- What can I do to add a variable from this form into the subject?

This subject is not configurable. You could use a checkbox on the form to ask the user if they'd like to be emailed a copy of the form after submission. If they select yes, show an input for an email address. In the process, use an email service task to send that email which can be much more customized including the body and the subject.
