I am not sure what your export process to Excel is, but you could use Workflow to "translate" the date format from standard to whichever format you need, then write to Excel.

The other thing to look at is your metadata fields - are the dates being stored in a field that is set to date type or is the field set to characters? You can check this in your Laserfiche Administration Console > Metadata Management > Fields, locate the one you are storing date into then make sure that the Type is "Date" and not "Text". If you need to change it to date type, be very careful how you do it because it might remove the data from that field..
