A simple protection can be applied by right-clicking the stamp and clicking properties > Metadata

You can then check the Protected box.

If this doesn't go far enough, you can use the Quick Fields Permanent Stamp process to burn it directly to the pixels. If you don't have Quick Fields, you can probably do something with a Workflow script if you have developer support.
