Does Laserfiche allow co-authoring for all of the Microsoft Office applications? This includes Excel and PowerPoint.

Yes, though to be clear the editing functionality is provided by an integration that Web Access has with Office Online Server.  You'll need a license for that from Microsoft and have it installed on a local server.

What version of MS Office is required for this?

Here's some information about OOS: https://www.microsoft.com/en-us/microsoft-365/blog/2016/05/04/office-online-server-now-available/  As the article indicates, this is a new/re-branded application for 2016.
