Remove fields from unassigned templates is not available if you are keeping the current template.  What exactly are you trying to do?  Are you trying to remove fields but keep the values?  If the fields are not part of the template and you don't want the values anymore, you should be able to "assign" values but leave the values blank.  As long as the value is blank and the field is not part of the template, it should remove the field.
