When assigning a task to someone. And you want them to receive an email. Is there any way to change who sent that email. I know we can change the "From" if I drag an email task to the process.

I do not believe that is an option currently. The "User Task" emails always use the default address configured it Forms.

If I'm not mistaken, this is not an arbitrary design choice; the default address is used because the "approve from email" functionality works by monitoring an inbox and therefore requires a static email address.

Gotcha....I wonder if this is something they can setup. Like if you check allow "approval from email". It won't allow you to change the sender email. Most of my situations require the user to access the form. Signatures required and possible fields needing input.
