Is it possible to assign read access to only specific Document Types within the "Doc Type" field?

For example, I have a field called "Doc Type - Student Records", that field contains a dropdown list. In that dropdown are bunch of document types like: Official Transcript, Name Change Form, Evaluation....

Is it possible to let a user see only Doc Type -Student Records that is marked "Official Transcript" and no other ones?

It sounds like you're referring to a metadata field. If that is the case, I do not believe there is currently a way to restrict access based on the value of a specific field; this would probably need to be done either through template access, folder access, shortcuts, security tags, or some combination of those.
