You could potentially scan everything in colour then use Quick Fields to convert the desired pages to black and white, I'm guessing that's where Tessa is going....You could also scan into a 3rd party application that supports coversheets, which can be inserted into the scanned document to switch scan settings within the same batch (such as Kofax, Image Capture Plus from Panasonic, etc.). You could then import these documents into Laserfiche directly or scan into the scan console using the universal driver.
