I will give that a try.  I've set the columns for her in the desktop client under the Options/Tools that Wesley mentioned above and they just don't stay as they were configured.  I will see how this works for her.

Glenn, in your experience do the attributes rebuild based on the settings that it encounters on the next login, or do we need to reset those column preferences again?

Yes  Once I have deleted all of the attributes from the admin console, I will have the user log back in, keeping in mind that upon that initial login after clearing their attributes, the LF defaults will load, then "reset" all of their columns, scan settings, default search, etc... and finally properly log out and close the client utility.  It has been a while since I have had to do this, but I believe that for the scan settings to be saved back to the server you have to scan and save a document, but I have not had an instance where this did not fully resolve the users issues.
