Forms- Ability to capture user who completed field/textbox

I have a user that is completing a series of check boxes in a form.  They need to be able to partially complete the form and then reassign it to other users to finish, but want to capture which user completed each individual checkbox in a corresponding field.  They need this functionality for regulatory reasons. I tried hiding a field with the default value current user until the checkbox was complete but further down the line when the checkbox is checked by an additional user it shows the initial user's name. Any suggestions would be greatly appreciated!

What token are you using to get the current user?

{/_currentuser_display}- It is in a field that stays hidden until the user makes a selection on the checkbox

The default value gets set on initialization, so when you reassign the task the field value will not change.

Is it possible to capture the user with Java and if so do you have an example?

Is this something that is on the product road map? I can think of multiple cases where having the current user would be useful if the case is re-assigned.
