Access BP Variables during course of Forms Process

I don't know if this is possible or not, but I'm trying to find a way to access whether fields have been completed during a Forms process.  I have an initial starting form that drops into the repository, and I collect the variables from it and start a workflow.  This is an initial form that further branches into 7 different forms, going to 7 different departments, culminating in a verification form down the road when everything is reassembled.  Everything works great...the issue is, management would like a report done through workflow every morning with completion percentage for each form.  I have put weight values for each field in a script to do the calculations...is there a way to see from workflow which fields have been completed in a form BEFORE the form is submitted?  Once it is submitted, the percentage is obviously 100%, so no need for reporting.  We have just gotten version 10.1. 

I notice when I put a 'Retrieve Business Process Variables' activity in a repeat sequence to check every day, the options are most recent submission (when the workflow started) and submission with ID#....nothing for current status.  Can I check current status through the forms database or is that only updated after each submission?  Do I need a web service?  Or is there a way to save to the repository when saved as a draft perhaps, so I could get the variables by saving the form each night as a draft automatically?

FYI I know there are plenty of options once logged into Forms to see which processes are at which stage, and even view the forms to see completed fields, but the processes are started by managers not part of the approval process, and they don't have forms participant licenses because once they submit the forms they are no longer a part of the process.  They just want informed on how the processes are going, etc.
