Setting default value in Quick Fields

I have a field that typically does not have a default value, but for some Quick Fields templates the value is always the same so I would like to automatically set the value and make it read only.  Is there a way to do this?

To set a default value, just click on the document class in the configuration pane in Quick Fields, and then type the value in the field in the metadata pane. Now Quick Fields will apply this field value to any new documents that are identified as this document class. 

To set the field to be read-only in Quick Fields, see this page in the help files.
